…preparing this years game for the freezer (and Christmas)

Preparation: plenty of workspace, some bin bags and my hunting knife…

The catch: 4 pheasants and 4 red-legged partridges…

The catch, closeup…

The carnage begins…

Progress: 1 pheasant and 1 partridge…

Almost done…

The bad bits you don’t want…

And the good stuff you do – that’s going to make some hearty pate…

All done, time to clean up…

As I’m typing we’ve got one pheasant in a pot making an italian-style ragu and there’s some pate (livers, kidneys and hearts of all 8 birds, butter, garlic, seasoning) in the fridge for later.

So we’ve got 4 pheasants (size of a small chicken) and 4 partridges and a pot of amazing pate. Cost: 1 hours labour and £7.00 from our local game keeper.

I love living in the country!
